Whats For Dinner Mom???
This is called "dinner in a pinch!" LOL
My mom has been serving this Cabbage Casserole for years! I have always enjoyed it and I have to say it is a very budget friendly dish as well...And in todays economy, budget friendly is the way to go!
Cabbage Casserole
1 Head Cabbage
1 lb. Ground Turkey or Ground Sirloin
1/2 Onion
1 tsp Garlic
2 Tbsp Olive Oil
2 or 3 Cans Tomato Soup
1 Jar Canned Tomatoes-Drained
1 Cup Brown Rice
Fresh Parsley and Basil-Garnish
Salt and Pepper
Use your largest skillet and saute onions, garlic, and cabbage in 2 T olive oil until tender. (About 15-20 min) Add Tomato Soup, Canned Tomatoes, and Brown Rice and let casserole cook for another 15-20 minutes. You can saute the ground meat seperately and drain fat. Add meat to casserole and add salt, pepper, basil, and parsley to taste. Serve with fresh bread and salad or fruit!
Its quick, easy, and its a definate money saver....Hope you enjoy it!
